Reflection by Kylie Armstrong

This trip was one that I will never forget and will always think back to with nothing but positive memories. Specifically, I will never forget the last night in Italy when we ate one of the best meals I have ever had at Locanda Rovicciano. Sitting at the table in the back of a dimly lit 15th-century house turned restaurant, I was suddenly hit with how special it was to be able to experience this. Not only was this a fun trip to a country that I have always dreamed of visiting, but we also got the chance to learn from world-renowned chefs and butchers and eat their incredible food. I loved watching Chef Andrea’s passion for cooking, and the last meal at Locanda Rovicciano was so amazing that I couldn’t believe I may never get the chance to eat it again. Starting with the pasta fritta I already knew that this meal would be unforgettable because I couldn’t stop myself from eating all the crispy and chewy pasta chips. Then came the sformatino di parmigiano that I had heard so much about and was looking forward to the entire trip. It was entirely different from anything I have ever eaten before but lived up to all of the hype. To me, it tasted like a mix between fluffy scrambled eggs and cheesy mashed potatoes with a light and airy texture and topped with shredded parmesan. Besides the fact that the meal was delicious, it also changed my life because it allowed me to realize how special this experience was. Sitting at the table in Andrea’s restaurant surrounded by all the new friends that I made, I decided that I want to study abroad as much as I can while I have this opportunity to travel the world and experience new things like this. It seems like a once in a lifetime opportunity to have had the chance to travel to Italy with one of my best friends and eat authentic Italian foods that I may never get a chance to try again.
