The next installment of our cooking classes!

Today, the second half of us made it to Andrea’s 15th century farmhouse-turned-reatsaurant, and were, as always, carried away with both the food and Andrea’s charm. This episode, students made cappelletti stuffed with ricotta and parmesan (photo 1), then tossed in garlic, olive oil and shredded zucchini (photo 2, in which Thea is about to flip the whole thing in the pan — which she did!), as well as eggplant lasagna, which came out perfectly (photo 3, Andrea plating for us all). Andrea really is quite the food rock star, as witnessed by his groupies flocking for photos (photo 4). And once again, more than a couple students in the van on the way home said, “This is the best day of my life.”

Finally, a new view I hadn’t seen before of Spoleto, taken from up near the hill across from the old city. Just a view of Spoleto and the Umbrian sky — hope you enjoy!!
